Kielbasa with Pasta, Beans and Spinach


I love sausage of almost any type, but it isn't always Weight Watchers friendly. When I saw this recipe using some of my favorite ingredients, I knew I had to try it out! I adapted this recipe very slightly from the Weight Watchers cookbook Fresh, Fabulous, Fast. It really lived up to the title. I was in a rush because I wanted to get the recipe photographed the night I made it and I was quickly running out of sunlight. The downside to the change of seasons! Luckily it came together in under a half hour and I was able to snap the pictures you see here.

Kielbasa with Pasta, Beans and Spinach
Adapted from Fresh, Fabulous, Fast

Makes 4 servings, serving size 1.5 cups

8 oz whole wheat penne
1/2 teaspoon salt
6 oz turkey kielbasa, sliced into 1/4 inch thick slices
4 cups spinach
1 cup drained and rinsed canned chickpeas
1/4 cup diced red onion
1 teaspoon minced garlic
Red pepper flakes to taste
1 tablespoon olive oil
2 tablespoons grated Parmesan cheese

Instructions
1. Place the pasta and salt into a large pot and cover with water; bring water to a boil and cook pasta until al dente, about 8 minutes; drain and set aside.

2. While the pasta is cooking, brown the sausage in a large skillet; add spinach, beans, onion, garlic and red pepper flakes and cook until the spinach is wilted; combine pasta and oil with the spinach mixture.
