Orzo and Spinach Salad



I bet you thought that I had forgotten about this post! I didn't, it is just the end of the semester and that really easy assignment that I thought would take only an hour ended up taking, like, seven. Oh well. That's what I get for procrastinating.

This salad is so simple to make and incredibly tasty! When I have dinner, I am often not satisfied with just a vegetable on the side. I also want a carb, even if I am running low on points and carbs are some of the most point-y things. Well, this salad is low in cards, points and suited my needs quite well. It is definitely an addition to my normal repertoire.

Orzo and Spinach Salad

Makes 4 servings, serving size about 1 cup

Ingredients
1/3 cup uncooked orzo
2 cups packed baby spinach
1 cup chopped red sweet pepper
2 teaspoons white wine vinegar
1/4 cup crumbled feta cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Instructions
1. Cook the orzo according to directions on package; drain.
2. Place spinach into a large bowl and pour drained orzo on top and toss; let the spinach wilt down.
3. Add pepper, vinegar, salt, pepper and feta and toss to combine.
