Homemade Tomato Salsa

I'm not sure I have ever met a person who does not enjoy chips and salsa. It is one of the best snacks out there. I decided that homemade salsa was probably better than anything I could buy in the store ( I am convinced homemade >>> store-bought anything) and was pleased to find out I am right. The key is using very fresh ingredients. You can used canned tomatoes and bottled minced garlic for example, but using fresh ingredients really livens up the taste. Normally I do all my shopping for recipes at the beginning of the week but I bought the ingredients for the salsa the night before to ensure their freshness.




Homemade Tomato Salsa

Makes 12 servings, serving size 1/4 cup

Ingredients
3 tomatoes, chopped
1 medium onion, chopped
2 cloves of garlic, minced
3 tablespoons cilantro, chopped
1 bell pepper, chopped
2 tablespoons red wine vinegar
4 oz chopped green chiles
1 tablespoon olive oil
1/2 teaspoon ground cumin
Juice of 1 lime
Salt and pepper to taste

Instructions:
1. Puree all ingredients in a blender or food processor; refrigerate for at least 2 hours to let flavors combine.
