I love coconut and I love chocolate. So when I saw this recipe from Weight Watchers I knew I would love it. The coconut milk makes the hot chocolate really smooth and creamy and delicious. It is the perfect ending to a cold day.
Coconut Hot Cocoa
Makes 6 servings, serving size 2/3 cup (perfect for adding whipped cream!)
1/4 cup unsweetened cocoa
1/3 cup water
1/2 cup sugar
1 1/2 cups light coconut milk
2 cups fat free milk
1/2 teaspoon vanilla extract
1. Whisk together the unsweetened cocoa, water and sugar over medium heat until the cocoa and sugar dissolve; do not let boil.
2. Add in the rest of the ingredients and let simmer until heated through.
