Spinach and Feta Pizza



The combination of spinach and feta is one of my favorite flavors. Almost nothing can't be improved with spinach and feta. OK, maybe spinach and feta pancakes is taking it a bit too far, but you get what I mean. This pizza replaces the sauce with spinach and abundant flavor. If you love spinach and feta as much as I do, this recipe is definitely for you.

I got the idea for this recipe from Allrecipes.com. I modified it to make it easier and to suit my personal tastes a bit better. I have also made it with some cooked, diced chicken and olives on top. I'm sure sundried tomatoes or peppers would also be nice. Feel free to experiment, because remember, everything tastes good with spinach and feta.



Spinach and Feta Pizza

Makes 6 servings, serving size 1 slice

Ingredients:
1 100% whole wheat pizza crust (I used Boboli)
2 cups raw spinach, roughly chopped
1/2 medium red onion, thinly sliced and separated into rings
1 clove of minced garlic (or 1/2 teaspoon bottled minced garlic)
1/8 teaspoon garlic salt
1 cup part-skim mozzarella cheese
1/4 cup feta cheese
1/2 teaspoon dried basil

Instructions
1. Preheat the oven to 400 degrees.

2. Spray a pizza pan or baking sheet with cooking spray.

3. Place the pizza crust on the prepared pan and top it first with the minced garlic and garlic salt.

4. Next layer the spinach on top, followed by the onions, cheeses and basil.


5. Bake the pizza for about 15 minutes, or until the mozzarella is melted and the feta is slightly browned.

6. Cut into 6 slices and enjoy.
